WThis is a simplified version of a beverage found on the seasonal cocktail list. This is a batch premix which is loaded with tastes of a Christmas time, making it excellent for your celebration. Save the extra syrup you can use for brunch beverages, desserts, or to make another batch of bikinis.
Bikini
Yields 10 people
Ingredients for the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Drink (yields 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
For the Cordial: Place all the components into a pan, bring to a gentle boil, stirring to dissolve. Then, remove from the stove and let it to reach room temperature completely. Transfer into an clean bottle, seal and store in the fridge, where it will keep for about one month.
To make Cocktail Base: Pour the specified spirits and syrup in a big jug, leave to sit for an hour, then filter it best through muslin, making it completely strained.
For serving: Pour 85ml of the cocktail base to a mixing glass filled with ice, gently stirring gently for one minute to cool it down. Pour to a chilled martini glass or a similar vessel, garnish with some cranberries and finish by giving it a quick spritz with the mandarin essence over the top.
